Ways of shopping for fish wisely - how to recognise fresh fish

  1. Fish should smell of clean sea
  2. Their eyes should be bright and not sunken in
  3. Gills should be bright and red
  4. Fish should have los of scales
  5. The scales should be shiny.
  6. Ideally fish is eaten on the day it is bought or else has to be frozen immediately.  There is nothing better than fresh fish though so if you have access to this don't freeze so much.  If you do freeze only do so for one month.
  7. Guts and gills should be removed before cooking or freezing fish
  8. Shellfish should have closed shells when bought
  9. Traditional dishes with fish include lampuka pie, lampuka served with a fresh tomato piquant sauce or fresh tune served with a fresh tomato sauce with basil.
