Buffet Style Party for twenty-four for a Saturday Evening – 17/10/2010
Preliminaries: Start thinking of possible menu from a week before.
Always bear in mind particular food likes and dislikes of guests
By Tuesday evening: Finalise Menu and Plan Shopping List
The Menu
Starters
Bruschetti with Carciofi Pate’ and Black Olive Pate’
accompanied with nuts, cherry tomatoes, mozzarello,stuffed olives, pesto dip and galletti

Main Course
Smoked Turkey with an horseradish and mustard sauce
Beef Tonnato – Thin layers of roast beef with tuna mayonnaise
Spinach and Salmon Roulade
Prawns lightly fried in tomato puree’ and garlic

Contorni
Baked Onion tart
Risotto with broad beans, zucchini and ricotta
Tomatoe and Parsley Salad
Marinated vegetables with bufalo mozzarella
Baked Pumpkin
Dessert
Chocolate, Almond and Rum Cake

Coffee
Brewed Coffee with Pasta Frolli (almond tarts)
Plan of Action
Tuesday: Take turkey to butcher for smoking
Wednesday : Shopping for all Food
Thursday: Shopping for all Fresh Vegetables
Thursday Evening
Start cooking Desserts: Pasta Frolli (almond tarts) to go with coffee, Chocolate and Almond and Rum Cake
Friday Evening
- Prepare the Roulade and Salmon Filling
- Bake Onion Tart
- Prepare tuna Mayonnaise
- Peel Beans (ful)
- Bake the Pumpkins
Saturday Morning
- Collect Turkey from Butcher
- Prepare Tomato and Parsley Salad
- Marinated Vegetables with bufala mozzarella
- Sear the Lucerto
- Make sure there are enough drinks to go around, particularly wine
Saturday Afternoon
- Prepare Risotto
- Phase two of Lucerto – slow cooking in oven (allow 20 minutes standing for cooling before carving).
- Prepare Prawns
Late Afternoon
- Setting out of plates, crockery, glasses etc
- Setting out the food (tuna mayonnaise with beef on a bed of rucola and walnuts, etc)
- Prepare bruschetti and things to go around the starters
- Prepare espresso coffee maker
- Make sure that the dishwasher is empty (for after dinner clearing).
