KAREN MUGLIETT

Karen Mugliett is a university lecturer in Nutrition, Family and Consumer Studies (NFCS) within the Faculty of Education. She holds a first degree in Education (with a specialisation in Home Economics and Early and Middle Years), a Masters degree in Education Policy Sociology and a Post Gradate diploma in Educational Administration and Management.  Karen holds a Doctorate in Education in Innovative Pedagogies in Education where she focused on the use of ICT in education both for the professional development of teachers as well as for teaching and learning.  She has created, tested and explored ways of how educational technologies can be used for the professional development of teachers and as constructivist learning experiences in class which give rise to effective pedagogic practices.  Karen has been instrumental in the development of a vision, policy and strategy for ICT in a school where she was a member of the Board of Governors until December 2010.  This school now boasts of state-of-the-art ICT facilities in each class and effective teacher training in ICT. 

She lectures in a variety of courses including: Nutrition, Gastronomy and Culinary skills, Childcare, Family and Parenting and Pedagogy for the past 20 years. Karen has been constantly training and adding to her expertise in these areas particularly through courses abroad, affiliations with foreign organisations in the field of nutrition education and research.   She has also attended a leading UK cookery school for intensive courses. She constantly shares her expertise in the field of NFCS through the promotion of food literacy, local and healthy food and lifestyles, as well as culinary techniques, wellness and home management issues on the local media, her book and various talks and courses which she delivers.  She aims to use this website to share this with the general public. Karen also gives cookery courses at her home, in schools, in people's own kitchens and at University to different target audiences which includes students of the Diploma in Gastronomy some of whom are chefs.  She has also given demonstrations live on TV and in various organisations.  Her most recent ones were at the Women's Expo April 2011 at the MFCC and to members of the Green Drinks Movement and Fish4Tomorrow in June 2011 where she gave a demonstration on fish cooking techniques using sustainable fish only.  Media is a sector where Karen has contributed extensively through the production and presentation of various radio and television programmes, magazine and newspaper articles.

Karen has also been active in both national and international organisations. She is a member of the local association for Home Economists (HEiA) as well as the international ones: European Consumer Citizenship Network (CCN) and Partnership for Education and Research for Responsible Living (PERL) where she has contributed to producing teaching material and guidelines for Sustainable Consumer Citizenship Education in Higher Education. She is a member of the International Federation of Home Economics, the Society of Nutrition Educators and the Slow Food Movement. Karen is a frequent guest lecturer on nutrition, childcare, home management and consumer issues within different schools, community organisations and radio and TV programmes.  In 2011 Karen was elected on the executive board of the European Association for Home Economics (EAHE). 

Karen has recently written a book which was published in December 2010, called, 'Seasonal and Sustainable:  Cooking for Healthy Living' - a book which emphasises the need to eat seasonal and local produce and promotes dishes with these fresh products. The book also includes a lot of sustainable and health tips besides information on how to budget, shop wisely and organise oneself and plan weekly menus to maintain a healthy lifestyle.
